Robert is a Chocolatier at Chocolat Moderne, an independent chocolate company based in New York City that creates handcrafted artisan chocolates and specialty chocolate products. Every day, he helps transform high quality ingredients into beautiful confections that delight customers from around the world.

I had the opportunity to meet Robert while he was crafting artisan chocolates by hand. Watching the level of precision, creativity, and attention to detail that goes into each piece made it clear that this is much more than simply making candy.

I also have to admit a personal favorite from Chocolat Moderne. Their Espresso Caramel Sauce poured over ice cream is absolutely incredible.

Turning a Passion for Food into a Career

Robert received his culinary education at the Institute of Culinary Education before beginning his career in chocolate making.

For the past 10 years, he has worked in the culinary world, building his skills and creating handcrafted chocolates that combine artistry with technical precision.

He says the culinary industry certainly has its challenges. It requires hard work, consistency, and a willingness to keep learning. Even so, he genuinely enjoys what he does and finds the work incredibly rewarding.

Robert believes chocolate making is an excellent career for people who enjoy working with food and are curious about how ingredients interact.
